The exceptional vintage of 2013 presented the opportunity to stretch the limits of winter winemaking, taking us to a more extreme place than ever before. The concentration and flavour of Canadian Icewine, determined by the degrees Brix at harvest, must reach a minimum standard of 35° Brix. On January 3rd, 2014 as an intensely cold and persistent winter blanketed our vineyards, the juice of each grape was concentrated to extreme levels, achieving the unprecedented mark of 50° Brix. Naturally frozen Vidal Blanc grapes were harvested from the Wiens Family Farm Vineyard in the Four Mile Creek sub-appellation of Niagara-on-the-Lake. After selecting only the first press juice, it was cold settled for three weeks before racking and fermentation. Then followed a very long, slow build-up and fermentation in stainless steel for about six weeks (the juice was stirred and warmed during fermentation daily to coax the yeast along and to ensure a healthy fermentation rate), until the fermentation stopped naturally. Post ferment, the wine was cold settled before racking off lees, and received minimal filtration before bottling. Daily tasting and careful monitoring resulted in an Icewine of breathtaking complexity, depth of flavour, luscious texture and mouth-feel, and balance between natural sweetness and acidity. Canadian gold in colour with a passionate bouquet of apricot flan, crème brulee, caramelized sugar and lemon custard. At first approach the palate senses a viscous, silky, velvety mouth-feel, then fabulous flavours of peach, pear, tropical fruit and caramel caress the mouth. The rich intense flavours and texture linger through on the finish with butter-cream, butterscotch, custard, and lemon drop notes. Serve chilled at 8 to 10°C in small white wine glasses. Enjoy as a beautiful afternoon or evening sipping wine or serve with glorious fruit based desserts, aged full flavoured cheeses, rich pâté, and custard and cream desserts. Brix 50 Icewine has emerged from a Canadian winter so rare, that limited production is reserved for the very few. 1,528 bottles produced.
